Thick Cut Salt & Pepper Pork Chops

The secret to juicy pork chops without making a brine? Buy the thickest ones you can find. They're harder to overcook, and the results are tasty and tender.

  • 2 boneless pork chops
  • salt and pepper
  • 2 tablespoons peanut oil


  1. Preheat oven to 450 degrees Fahrenheit. 
  2. Brush pork chops with peanut oil and season front, back, and sides of pork chops generously with salt and pepper. 
  3. Gradually preheat cast iron skillet up to medium-high heat.
  4. Sear pork chops for 1-1½ minutes on each side.
  5. Remove from stovetop and bake for 4-6 minutes. 
  6. Let rest for 5 minutes before serving.
