This special dessert takes the crunchy, caramelly sweetness of a pecan pie and upgrades it with a chocolate chip twist and Kentucky bourbon. This is a favorite at Kentucky Derby parties for a reason, though we've been known to make it year round.
Directions
- Prepare your dough. You can use our basic pie dough recipe or whatever go-to recipe you prefer—and store bought is absolutely fine. Roll the dough out until it will fit in and up the sides of a 10.25 inch skillet; press the crust into the pan and set aside.
- Preheat oven to 350˚ F.
- In a small saucepan, brown the butter over medium heat. Melt completely and cook until small brown flecks form at the bottom and it begins to smell nutty.
- In a bowl, whisk together the brown sugar, sugar, and browned butter. Add eggs one at a time, whisking until smooth. Stir in bourbon, vanilla, flour, and salt.
- Fold in 1.5 cups toasted pecans and chocolate chunks.
- Pour into the pie crust. Stud with remaining pecans and bake for 35-40 minutes. The edges should be set and slightly puffed.
- Rest 1 hour before slicing and you’re off to the races!
