With its buttery-sweet flavor and perfectly tender texture, it’s no wonder that lobster enjoys perhaps the most luxurious reputation among all seafood. But don’t let this decadent delicacy intimidate you. Grilling lobster tails to perfection is easier than you might think. And with the addition of warm, basted-in garlic butter and tangy charred lemon slices, they’re an even more mouthwatering indulgence your guests will savor.
Directions
- Soak 6 wooden skewers in water while preparing the grill.
- Light charcoal and let it preheat until edges are gray (about 10 minutes).
- Add charcoal to grill, place cooking grate on top, and preheat for about 5 minutes with the draft ¼ open.
- Using kitchen shears, cut lobster tail shells down the backs. Be careful not to cut through too much of the meat. Squeeze shells to open and expose the meat.
- While grill is heating, thread skewers through lobster tails and season with ½ teaspoon salt and ½ teaspoon pepper. Drizzle with olive oil.
- Set a melting pot on the grill and add garlic, butter, and remaining salt and pepper. Stir frequently until butter is melted.
- Oil the grill grate and sear lobster tails, meat sides down, for 5 minutes per side.
- Grill lemon wedges for 2-4 minutes per side.
- After flipping, baste lobster tails with garlic butter while they finish cooking.
- Top with cheese.
- Remove melting pot and squeeze in one wedge of charred lemon and parsley. Garnish with remaining parsley, and serve alongside lobster tails.
