We love a recipe that adds some drama to the meal, and this one does. This bananas foster recipe comes from Good Lookin’ Cookin’ by Dolly Parton and Rachel Parton George and features an option to light warm bananas and a caramel sauce on fire. Every kitchen should have a fire extinguisher—this would be a good occasion to make sure yours has one, too!
Directions
- Peel the banana and slice lengthwise, then set aside. Melt the butter in an 8- or 10-inch skillet over medium-low heat. Stir in the brown sugar, cinnamon, and vanilla. Cook, stirring often, until the sugar dissolves, 3 to 4 minutes. If you’re going to “light my fire,” this is when you do it! (But have a lid close just in case!) Use a small kitchen hand torch for the task of a long stick lighter. Add the rum to the skillet and light it—the alcohol in the rum should burn just briefly, and then the flame will go out.
- Turn down the heat to low, add the banana slices and gently flip them, coating them in the liquid, and cook until the bananas are heated through and just beginning to soften, about 2 minutes.
- Place two banana slices and one scoop of ice cream in each dish. Top with warm sauce from the skillet and serve.
