These tender, folded rolls are a hit at holiday gatherings everywhere, in part because of their delightful, soft texture (and excellent sauce-mopping powers). We top these ones with honey butter and a flaky salt, making them a show-stealing side.
Directions
- Prepare the dough. In the bowl of a stand mixer, combine milk, water, yeast, and honey. Let sit 5-10 minutes until foamy. Add melted butter, eggs, salt, and 4 cups of flour. Mix until shaggy.
- Using the dough hook on your stand mixer, knead for 6-8 minutes, adding a little flour, up to half a cup, until the dough is soft and smooth.
- Let dough rise. Transfer to a greased bowl and cover, letting the dough rise in a warm spot for 1 – 1 ½ hours undisturbed. It will be roughly doubled.
- Prepare your ingredients for shaping. In a small bowl stir together melted butter and honey. Grease the cast iron casserole with softened butter on bottom and sides.
- Shape the rolls. Turn dough onto a lightly floured surface and roll into a rectangle about ½ inch thick. Using a bench scraper or knife, cut into 3 x 2 inch rectangles. Brush each with honey butter, then fold slightly off centered.
- Rise and bake. Set folded rolls in the buttered casserole pan. They should touch slightly. Cover with moist dish towel and let rise again in a warm spot 30 minutes.
- Preheat oven to 375 degrees and bake for 20 – 25 minutes until golden brown. Brush with remaining honey butter and sprinkle with flaky salt. Serve warm.
