Skirt steak is a favorite around here thanks to its big flavor and versatility. But a great cut of meat deserves an equally bold blend of spices. Enter: Lodge Sear Blends. This recipe features our Sizzling Citrus Sear Blend—specially crafted for high-heat cooking and not so shy on zingy, zesty flavor. We top it all off with a cool crema, fresh, crunchy slaw, plus a squeeze of grilled orange slices.
Directions
- Preheat Sportsman’s Pro Grill, bringing the grill to medium-high heat.
- While the grill is preheating, pat steak dry with paper towels, then season generously with salt and Sizzling Citrus Sear Blend.
- Mix crema ingredients in a small bowl and refrigerate until ready to serve. Prepare slaw, combining lime juice, 2 tablespoons reserved crema, honey, and Sizzling Citrus Sear Blend in a small bowl. Toss together with cabbage, carrots, and green onion. Set aside.
- Oil the grill grates of the Sportsman’s Pro and sear steak for 2-3 minutes per side, or until desired doneness. Remove from grill and tent with aluminum foil.
- Set orange wedges and tortillas on the grill and cook until lightly charred, 1-2 minutes.
- Slice the steak against the grain and sprinkle with a little more Sizzling Citrus. Squeeze two of the charred lemon wedges into slaw and mix well.
- Assemble the tacos, with sliced steak, slaw, crema, and another squeeze of charred orange over prepared taco. Garnish with cilantro and serve.
