We set out to use our Sweet Spot Skillet Cornbread Mix in an all new way, and the result is a super easy, super tasty cornbread cookie. Ingredients

  • 1 package of Sweet Spot Skillet Cornbread Mix (not prepared)
  • 6 tablespoons butter, softened
  • 2 tablespoons light brown sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 1 egg yolk
  • ½ teaspoon cinnamon

Directions

  1. Preheat oven to 375 degrees. In the bowl of a stand mixer, cream the butter and brown sugar together, for about 2 minutes. Add vanilla extract and eggs and mix until combined. Then, add the cinnamon and the Sweet Spot Skillet Cornbread Mix; mix until a dough ball forms in the bowl.
  2. Using a tablespoon, scoop dough and roll in your hands to form a ball. Place dough balls 2 inches apart on the baking sheet and bake for 11 to 13 minutes.
  3. Remove from the oven and place cookies on cooling racks.
