Ingredients

2 ounces vegetable oil 

1 ½ pounds flank steak, seasoned & thinly sliced 

1 bag tortilla chips 

3 cups shredded cheese (cheddar or Mexican blend) 

1 can black beans, drained and rinsed 

½ cup red onion, diced 

1 jalapeño, thinly sliced 

¼ cup green onion, thinly sliced 

Directions

  1. Place the skillet on the grill or stovetop over medium-high heat and preheat for 10 minutes. Check your temperature by sprinkling a few drops of water over the cooking surface. If the water dances and evaporates quickly, you’re good to go. 

  2. Oil your pan and add the seasoned steak to the hot skillet in a single layer and sear for 2-3 minutes, until just cooked through. Remove the steak to a tray and set aside. 

  3. Reduce the heat to medium-low and add tortilla chips to the skillet. Top with shredded cheese, cooked steak, and black beans. Close the grill lid or cover the skillet with a lid for 2-3 minutes, or until the cheese fully melts. 

  4. Remove the skillet from the grill and top with red onion, jalapeño, and green onion. Serve from the skillet!
