Plus, it’s a great recipe to get the kids involved with the baking fun. The hard part? Finding the perfect sprinkles to top them off! Level Intermediate Prep Time 20 minutes Cook Time 20-25 minutes Serves 6 Cook it With Our Muffin Pan Ingredients Cupcake Batter 1 cup (120 grams) all-pupose flour ¾ teaspoon baking powder ¼ teaspoon salt ¼ cup (57 grams) unsalted butter ½ cup (99 grams) sugar 1 egg 1 teaspoon vanilla extract ¼ cup (57 grams) buttermilk Buttercream Frosting ½ cup (113 grams) butter, softened 2 cups (½ pound) powdered sugar 1 teaspoon vanilla extract ⅛ teaspoon salt 2 teaspoons milk, as needed Directions Preheat oven to 350° F. Whisk flour, baking powder, and salt. Set aside. Using a hand mixer, cream butter and sugar until light and fluffy, about 5 minutes. Then, beat in egg and vanilla. Reduce the speed of the mixer to low and add dry mixture, a little at a time, with milk, until batter comes together. Scrape down the sides of the bowl as needed. Place cupcake liners in the wells of a cast iron muffin pan. Fill the liners 2/3 of the way full with batter. Bake for 20–25 minutes or until a toothpick comes out clean. While the cupcakes bake, prepare the frosting. Cream butter in a mixing bowl fitted with the paddle attachment. Gradually beat in powdered sugar until fully incorporated. Beat in vanilla extract and salt. Add milk a little at a time until the frosting reaches preferred consistency. Set aside. Place on a wire rack and let cool completely before frosting.
