Classic Vanilla Cupcakes

Classic Vanilla Cupcakes

Ingredients

Cupcake Batter
  • 1 cup (120 grams) all-pupose flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup (57 grams) unsalted butter
  • ½ cup (99 grams) sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¼ cup (57 grams) buttermilk
Buttercream Frosting
  • ½ cup (113 grams) butter, softened
  • 2 cups (½ pound) powdered sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2 teaspoons milk, as needed

Directions

  1. Preheat oven to 350° F.
  2. Whisk flour, baking powder, and salt. Set aside.
  3. Using a hand mixer, cream butter and sugar until light and fluffy, about 5 minutes. Then, beat in egg and vanilla.
  4. Reduce the speed of the mixer to low and add dry mixture, a little at a time, with milk, until batter comes together. Scrape down the sides of the bowl as needed.
  5. Place cupcake liners in the wells of a cast iron muffin pan. Fill the liners 2/3 of the way full with batter.
  6. Bake for 20–25 minutes or until a toothpick comes out clean. 
  7. While the cupcakes bake, prepare the frosting. Cream butter in a mixing bowl fitted with the paddle attachment. 
  8. Gradually beat in powdered sugar until fully incorporated.
  9. Beat in vanilla extract and salt. Add milk a little at a time until the frosting reaches preferred consistency. Set aside.
  10. Place on a wire rack and let cool completely before frosting.
