Grilled Cajun Shrimp with Pineapple Remoulade
This grilled recipe comes together quickly and brings sweet heat to your meal, with fiery shrimp and caramelized pineapple rings. We especially love to eat this outside under a summer sky with a fresh, herby salad.

Ingredients
- ½ cup mayonnaise
- 1 tablespoon mustard, Creole or stone ground
- 1 tablespoon pineapple juice
- 2 teaspoons crushed pineapple
- 1 clove minced garlic
- 1 teaspoon paprika
- ½ teaspoon pickle juice
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 pound shrimp, peeled and deveined
- 4 pineapple rings
- red pepper flakes, garnish
- chopped parsley, garnish
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1 teaspoon thyme
- ½ teaspoon salt
- ½ cayenne pepper
Directions
1. Combine the first nine ingredients in a small bowl and whisk until well incorporated. Season with salt and pepper; refrigerate until ready to serve.
2. Preheat the grill over medium-high heat with the lid closed for 10 minutes. Add the grill topper to the grill, close the lid and continue to preheat for 5-10 minutes.
3. Meanwhile, combine all Cajun seasoning ingredients; pat shrimp dry and season liberally on both sides.
4. Oil the grill topper and sear shrimp in single layer batches until nicely charred, about 2-3 minutes per side. Remove to a platter.
5. While the shrimp is cooking, sprinkle the pineapple rings on both sides with Cajun seasoning mixture. Oil the grill grate and add the pineapple; cook undisturbed for 2-3 minutes per side and remove.
6. Transfer the grilled pineapple to a platter with the shrimp and drizzle with remoulade. Garnish with parsley and red pepper flakes. Serve immediately.
